Fall Recipe: Quinoa Chili

With the cooler months approaching this is a great chili that is packed with protein from beans and quinoa!

Makes 4 servings
1 tablespoon olive oil
3 cloves garlic, minced
1 onion, sliced
1½ tablespoons chili powder
2 teaspoons ground cumin
1½ teaspoons paprika
½ teaspoon cayenne pepper
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
2 cans diced tomatoes 1 can tomato sauce
2 cups water
¼ cup quinoa, dry
2 cups zucchini, chopped
¼ cup cilantro, chopped
½ avocado
Fresh lime juice
Greek yogurt to top (optional)

Directions:

1. Heat oil in pan and add onion. Sauté until translucent. Add garlic. Cook until fragrant.
2. Add chili powder, ground cumin, paprika, and cayenne pepper. Cook until fragrant.
3. Add canned beans, diced tomatoes, tomato sauce, and 2 cups water.
4. Stir in dry quinoa.
5. Bring to a simmer and about 20 minutes.
6. Add chopped zucchini and cook for another 10 minutes.
7. Season with salt and freshly ground pepper.
8. Top with fresh cilantro, squeeze of fresh lime, 1/8 avocado slice, and dollop of Greek yogurt.

The chili can be put into individual portion sizes and frozen or saved for a weekend meal.

Past Happenings at Transform

July: Hike at Rattlesnake Ledge

For our July Community Group Activity, we woke up early and hiked Rattle Snake Ledge. It was a challenging but also doable hike at 5.3 miles roundtrip. This was our front desk coordinator, Alysia’s first-time hiking. As always, it’s a great reminder to get out there and try new things!

August: Hike at St. Edward State Park

For our August activity we headed over to beautiful St Edward’s State Park. The park is home to Bastyr University, where our very own dietitian Debie McSperitt studied! Within the park there is also a Catholic seminary that has been converted into a luxury hotel. We hiked the 2.2 mile loop south trail that took us along Lake Washington. Some even dipped their toes in the water!

This is a great local hike that can be completed on a weekday that is nestled between Kenmore and Kirkland.

September: Virtual Community Group, Back to Basics

With routines back in full swing, during our September Community Group we discussed getting Back to Basics. Kelly, one of our dietitians discussed different ways to balance your meals and snacks that included protein, fats, carbohydrates, and fiber. We also discussed accountability and ways to increase movement throughout the day.

Third IBC - Oxford University World Congress

This past September I had the privilege of attending the Third IBC – Oxford University World Congress. Our paper on replicating same day case sleeve gastrectomy was accepted as a poster, which I had the privilege of presenting.

There were 70 different countries represented with surgical leaders in bariatric, metabolic, endoscopic and robotic surgery. The meeting showcased many innovative technologies and procedures currently being developed, many which are applicable to the outpatient setting. It was great to speak directly with these worldwide leaders and share the work we are doing at Transform. Meetings like the IBC – Oxford University World Congress keep us at the forefront of innovation. -Dr. Billing
